Corn Fritters

Ingredients

1 cup (160g) corn kernels

2 eggs

½ cup CERELAC Multigrain with Pear Baby Cereal

½ cup (125mL) water 

1 cup (20g) spinach, chopped

¼ cup (30g) cheddar cheese, shredded

Spray oil for cooking

  • Instructions

    1. Place corn, eggs, dry CERELAC Multigrain with Pear Baby Cereal and water in a blender and blend until smooth. 
    2. Pour the mix into a bowl, add spinach, cheese, and mix through. 
    3. Heat a non-stick frying pan over medium heat; spray with oil. Add tablespoonfuls of mixture to the pan and cook for 2 minutes on each side or until golden; repeat with remaining mixture.
    4. Cut corn fritters into halves for younger babies, serve warm.

    TIPS: Batch cooking - Why not double the recipe and freeze some fritters for when you need a quick afternoon tea for your little one. Simply heat up on the microwave from frozen for 4 min.
